Pumpkin salmon salad

Rolled smoked salmon to look like roses and placed them on mashed pumpkin salad. Young spinach leaves and capers decorated together as garnish.
Pumpkin salad; steamed and mashed butternut squash, crushed nuts(almond, walnut, hazelnut etc) and cranberries mixed

I love how the decoration came out to be! Simple but nutitious and tasty meal for this season with many pumpkins bought for holloween and thanksgiving.
